Position Overview:
An exciting opportunity exists at our well-established 2* Michelin restaurant for a lead Sommelier to join the team. Along with two assistants, you will work to enhance further our wine service and collection of approximately 650 wines. Comprehensive wine knowledge is a prerequisite and a curious mind that is always open to further learning. A strong sense of hospitality and customer service is essential, as it is a key part of our business as it is a restaurant with a strong reputation for friendly but efficient service. Further learning will be supported fully in this position but an insight into future trends for wine lists vis a-vis selection would be helpful.
What We’re Looking For & Responsibilities:
* Driving beverage revenue in the restaurant and maintaining beverage costs within budget;
* Controlling and monitoring wine orders, stock and par level;
* Creating and maintaining uo to date wine list as per Chapter One by Mickael Viljanen standards
* Reviewing and analysing sales to ensure stock rotation and profitability remain within targets
* Training all front-of-house team members on existing and new products, as well as selling techniques and any other necessary beverage training
* Constantly reviewing guest feedback, planning and implementing corrective action if needed to ensure guest satisfaction
* Building rapport with key suppliers and price negotiation.
* Tracking and sharing information regarding new business trends and generating new business opportunities.
Skills
To move into this position, you will draw on your 3 years + experience in similar luxury, high-end work environments as Head Sommelier. You will have intermediate-level Microsoft Office applications skills - particularly Excel, Word and Adobe as well as a high level of written and verbal business English.
